Wholesome Sweeteners Organic Sugar (Evaporated Cane Juice) is an unrefined sugar made from 100% certified organic sugar cane. At the mill, our organic sugar goes through a crystallization process, and is bagged immediately. It is a ‘sœfirst crystallization’s sugar, which means the cane is harvested, the juice is extracted, any field impurities are removed and it is crystallized. All of this is done within twenty-four hours of the cane harvest. Because it is far less processed than traditional white sugar, it retains a natural light blond color and a delicious natural taste. Our Organic Cane Sugar comes from sugar cane grown in southern Paraguay where

we’sve worked with local farming cooperatives since 2001. In the first 10 years, we saw

organic cane cultivation grow ten-fold ‘s“ from 10,000 acres to 100,000 acres ‘s“ as the U.S.

demand for organic sugar increased. Today, more and more local farmers are receiving

training and assistance to convert to organic and sustainable farming practices.

With more farmers transitioning to organic cultivation, less chemicals are applied to the

land. The sugar cane is grown and nurtured naturally, without the use of chemical

fertilizers, pesticides and herbicides. This, in turn, helps preserve the environment by

reducing runoff into our rivers and oceans, as well as protects the health of farmers and

their families. Upon the cane’ss maturing, it is then ‘sœgreen cut’s or hand-harvested, and

the tops of the sugar cane are left in the field to enrich the soil and control weeds. The

cane is never burned or sprayed, which can be a damaging process to the cane and the

field. The sugar cane is then transported to the mill.

Wholesome! ® partners with Azucarera Paraguaya (AZPA), a local Paraguayan sugar mill,

that has served the area for more than 100 years. Upon arrival at the mill, the cane

stalks are crushed to extract the sweet juices. The crushed stalks, called bagasse, are

used to fuel the mill’ss boilers, providing enough electricity for the mill so that no fossil

fuel is necessary. The cane juice is then heated until the rich molasses evaporates and

begins to crystallize. This leaves behind a beautiful blonde-colored sugar full of flavor.
